Mango Walnut Bread (Eggless)

Mango Bread is one delicious dessert that melts in the mouth! I will guarantee you, it will get wiped off the casserole within a couple of hours (at the most stretch it to a day): ) I love corn bread and this is a nice variation with the mango flavor. I must confess that this season I have enjoyed way too many mangoes. Each time that I stepped into a supermarket I have picked up a case of nice ripe mangoes! Ate to my hearts content! :) Also ended up making few dishes using it like this mango bread, popsicles, mango lassi, aamras poori, mango shakes, mango ice cream etc.


One lady who is a die-hard fan of Mangoes is none other than my MOM :) Have never seen anyone love something so much...she will easily trade a mango for her precious jewelry :), I am telling ya. So you can guess this fruit will always be special to me :) My dad usually gets a case of mangoes for their anniversary which conveniently falls in summer during its peak season:)

This bread is very simple and uses few ingredients which usually are lying in your pantry, it is a no-stress dessert. Try it and you will love it!

Let us check the recipe:


Ingredients:
  • 1 cup rava(semolina)
  • 1/2 cup butter (8 tbsp)
  • 1/2 cup sugar
  • 1/2 cup walnuts
  • 1/2 tsp cardamom powder
  • 1 tsp baking powder
  • 1 cup mango pulp
  • pinch salt


Preparation:
  • Preheat the oven to 375F/190C.
  • In a mixing bowl add semolina, baking powder, butter and mix together. Then add the rest of the above ingredients except walnuts. Whip it nicely till it all comes together.
  • Toast the walnut in a pan on a low heat for few minutes.
  • Add 1/4 cup of walnuts into the batter and fold it gently.
  • Grease a baking pan with butter and add this mango/semolina batter evenly.
  • Now distribute remaining walnut on top and bake it for 35-40 minutes.
  • When you stick a toothpick in the centre of the bread, it should come out clean, else bake for 5 more minutes and check again.
  • Your bread is ready to be enjoyed after it cools down a little bit. We don't want burnt tongues :):)

Nutella-Banana Popsicles

Yes, it is raining popsicles at Badal's residence :) I made a few different kind(flavors and ingredients) of popsicles and so far liked this 'banana mixed with nutella' and some mango bits in it...it is suppa-fantab-yummilicious (coining new words after tasting it), you may also come up with some new adjectives after tasting it, I can bet :)

Over ripe bananas on the counter is a sad story in almost every household. It really makes me cry :( Most of us end up making banana sheera, buns, cake or milkshake(maybe). Now I have found a new way to use it up! Yes, Popsicles!! and trust me it tastes amazing.

Nutella is a universally loved hazelnut cocoa spread... kids absolutely love it along with us adults! So this combination is simply deadly. I also went ahead and added chunky bites of ripe mango in it, it blends in the taste really nicely! And more so it makes a lovely looking popsicle too :) Beauty with the Swad(taste) kinda thing going on there hehe

Let us quickly take a look at this recipe:

Ingredients:
  • 3 ripe bananas
  • 2 tbsp thick plain yogurt
  • 2 tbsp nutella spread
  • 2 tbsp mango cut in chunky bites ( optional)
  • handful of crushed almonds (optional)


Preparation:
  • Blend all the ingredients except mango, almonds.
  • Pour this mixture in the popsicle molds filling it up to 3/4 of the mold and add few mango chunks in it. Close the lid and let it chill for few hours until it sets.
  • Place the popsicle molds in the warm water for a few seconds to smoothly get it out or keep under the running water for a few secs.
  • Njoy it in the hot weather by dipping in crushed almonds....
You may also enjoy watermelon-berries popsicles.

Mango Lassi - Summer Mocktail




Yay!! Mango season is here! Today is my lucky day as I got 2 boxes of mangoes which are just ripe and ready to be eaten. If someone gives me a choice between a Mango fruit and a dish made with Mango without giving a second thought I will choose the fruit. But lassi is an exception :) Made with yogurt and milk, this drink is a rocking summer mocktail. It just takes a few minutes to prepare and after relishing it, I can bet that your day will pass by blissfully :)



I have my blissful moments looking at my son enjoying that juicy delicious fruit. The dedication with which he eats the mango is exactly the way I used to eat...sucking away on that gigantic center seed/pit till no flesh is left on it hehe. He simply loves mango lassi. It makes a healthy and filling after school drink.

So let's take a look at this gorgeous MANGO LASSI recipe:
MANGO LASSI
Ingredients:
  • 1 cup mango pieces 
  • 1 cup thick yogurt
  • 1/2 cup milk
  • 1 tbsp sugar or honey (adjust depending on the sweetness of the mango)
  • pinch of cardamom
  • pinch of saffron (optional)
Preparation:
  • Add mango pieces in a blender and grind to a smooth paste.
  • Add yogurt and grind again blending it together.
  • Now add cardamom, milk and pulse few times. 
  • Adjust the thickness as per your liking. If you want your lassi to be more orange in color, add saffron.
  • Your delicious lassi is ready.































Note: If fresh mangoes are not available don't be disheartened, you can use a store bought good quality mango pulp too.

Mango Ice Cream

First and foremost 'Mango' word gets the drool in line, in our mouth and then adding ice cream to it, it's just ready to explode out ha ha ha. I co-relate mango with my mom, because that's her favorite fruit. I can even go to an extent of saying, she might just choose mangoes over her daughters in the summer season of mangoes hehee...I love mangoes too, I mean who doesn't? I came across this recipe 10 years ago and have been making it since then. Everytime I make it, it's a big hit! It's so easy to make that you will be thrilled to learn this recipe. I can see few bachelor's doing a happy dance :) So put on that chef cap and make this recipe like a boss :)

Ingredients:
  • 1 30 oz tin of Mango Pulp (or homemade mango pulp even better)
  • 1 8 oz of cool whip (whipped cream)
  • 1 14 oz tin of condensed milk
  • 1/4 tsp kesar crushed in few drops of milk
  • handful of your favorite nuts roughly chopped (pistachios, cashews, almond)

Preparation:
  • Take mango pulp, condensed milk in a bowl, and mix everything together.
  • Now fold in gently cool whip with a spatula. 
  • Now whisk this mixture with hand mixer high for 2 minutes and low on 2 minutes till its nice n smooth. 
  • Take 1/4 tsp kesar, add warm milk and crush it. 
  • Pour it on the mixture, slowly swirl it, add half of chopped nuts over the ice cream and freeze it till the ice cream gets set. Add remaining crushed nuts over it before serving or you can pour some caramel sauce too.
