This recipe was shared by my good web/foodie friend Donna Pinto who is a great cook. They are very delicious and makes a very eye pleasing appetizer. Spice lovers are going to go bonkers over it :)
Let's get to the recipe:
STUFFED JALAPENOS |
- 10-12 Jalapeno peppers
- 1 tsp tamarind pulp
- 1/2 cup peanuts dry roasted
- 1/2 cup dry grated coconut roasted
- 1 small marble shaped tamarind
- 1/2 tsp chilli powder
- 1-2 tsp mustard oil
- salt to taste
- 1 tsp sesame seeds dry roasted
- handful chopped cilantro
- Wash the Jalapeno peppers and pat dry with a towel. Make a slit in the centre, deseed it to take away the spiciness.
- Mix 1 cup water, 1 tsp tamarind pulp and salt. Soak Jalapenos in this mixture for 15 minutes or so.
- Remove the Jalapenos and on a pan, fry/roast it on all sides and keep aside.
- Make a coarse mixture of roasted peanuts, dry coconut, chilli powder and tamarind. Add mustard oil, salt and mix together.
- Stuff the jalapenos with this mixture and garnish it with roasted sesame seeds and cilantro. It's ready to be launched into your tummy's :)
