Stuffed Jalapenos

'Jalapenos' brings a smile to my face. When I first arrived in America, I had gone to a subway joint and had asked for jalapeno toppings for my sub, pronouncing the word like it read. The person on the other side of the counter smiled and said politely it's 'Ha-lapenos'. :) I was embarrassed for a second and then wore a weird look on my face for sometime and never forgot the word :)
This recipe was shared by my good web/foodie friend Donna Pinto who is a great cook.  They are very delicious and makes a very eye pleasing appetizer.  Spice lovers are going to go bonkers over it :)
Let's get to the recipe:
STUFFED JALAPENOS
Ingredients: 
  • 10-12 Jalapeno peppers
  • 1 tsp tamarind pulp
  • 1/2 cup peanuts dry roasted
  • 1/2 cup dry grated coconut roasted
  • 1 small marble shaped tamarind
  • 1/2 tsp chilli powder
  • 1-2 tsp mustard oil
  • salt to taste
  • 1 tsp sesame seeds dry roasted
  • handful chopped cilantro
Preparation:
  • Wash the Jalapeno peppers and pat dry with a towel. Make a slit in the centre, deseed it to take away the spiciness.
  • Mix 1 cup water, 1 tsp tamarind pulp and salt. Soak Jalapenos in this mixture for 15 minutes or so.
  • Remove the Jalapenos and on a pan, fry/roast it on all sides and keep aside.
  • Make a coarse mixture of roasted peanuts, dry coconut, chilli powder and tamarind. Add mustard oil, salt and mix together. 
  • Stuff the jalapenos with this mixture and garnish it with roasted sesame seeds and cilantro. It's ready to be launched into your tummy's :)
