Rava Thalipeeth (Semolina Pancakes)

Filling, Yum and Healthy-  Thalipeeth (pancakes, bhakri) can be enjoyed for breakfast or you can munch on it during your snack time or you can also have a couple of these for your lunch. The choice is yours! People also have it on the days they are fasting. Made out of rava (sooji or semolina), they taste yummy with any kind of chutney and clarified butter or plain butter on it. I usually make it for breakfast. Its texture and ability to go easy on the stomach makes it a comfort food. Quick to make and tasty to eat, it's also known as rava bhakri.
Let's get to the recipe:
SOOJI THALIPEETH (SEMOLINA PANCAKE)
Ingredients:
  • 1 cup rava (sooji, semolina)
  • 1 small onion chopped
  • 1-inch ginger grated
  • 2 green chillies chopped
  • 2 tbsp grated coconut
  • 10 curry leaves (optional)
  • handful chopped cilantro
  • 1-2 tsp sugar or jaggery
  • salt as per taste
  • 1/2 cup of water or more
  • 1 tbsp grated cucumber (optional)
  • 1 tbsp grated carrots (optional)
  • oil to shallow fry
    Preparation:
  • Mix all the ingredients together along with the water and bring it to a thick pancake batter consistency.
  • Keep aside for 10 minutes, let the rava soak in. You may want to add little bit more water if it is too thick.
  • Heat a dutch flat pan/ tava, add 1 tsp oil and spread it evenly.  Take a ladle and pour the batter making a circle and using the back of the ladle spread it on the tava. Many people just spread it with fingers. Add oil little by little over the edges and over the rava thalipeeth. 
  • Cover it with a lid and on medium flame let it cook for 4-5 minutes.
  • Flip and repeat the process till it's cooked, about 3-4 minutes. 
  • Remove it from the tava and serve with chutney or a dollop of butter on it. Goes well with a hot cup of tea or coffee.

Nutrition Fact: Since rava, sooji or semolina is made from durum wheat(hard variety, cream of wheat) and not the usual soft wheat which is used in bread making, it is digested slowly. Having a low glycemic index, sooji is ideal for those who wish to lose weight or those who have blood sugar problems. It improves kidney problem due to its potassium content.
